Ingredients

  • 2 cup glutinous sticky rice
  • 1/2 cup water, for grinding
  • 2 tbsp jaggery, grated
  • 1 piece banana leaf, for steaming

How to cook it

  1. The night before, rinse the sticky rice well and soak it fully submerged in water overnight.
  2. The next morning, drain the rice and grind it with the measured water into a thick, smooth paste.
  3. Stir the jaggery into the paste for a lightly sweet version, or leave it plain, which is how it is eaten most days.
  4. Line a steamer basket with the banana leaf and spoon the paste into small, flattened rounds.
  5. Steam over boiling water until the rounds turn firm, glossy, and slightly chewy, about 30 minutes.
  6. Let cool just enough to handle, then serve warm alongside black tea.
  7. This plain steamed cake is everyday Mizo breakfast food, not only a Chapchar Kut festival treat.
