Northeast Indian
Chira Doi Gur (Flattened Rice with Curd and Jaggery)
Chira Doi Gur (Flattened Rice with Curd and Jaggery) is Northeast Indian home cooking, eaten at breakfast. On the plate it is the dish at the centre and the carb everything else is eaten with. Below is what usually sits beside it, what it does and does not contain, and what else to cook once you have made it.
Ingredients
- 1.5 cup flattened rice (chira)
- 1 cup curd
- 3 tbsp jaggery, grated
How to cook it
- Rinse the flattened rice briefly under running water, just enough to dampen the flakes without turning them mushy.
- Let it sit for 2 to 3 minutes so the rice softens and swells slightly.
- Spoon the softened chira into a bowl and top with the curd.
- Scatter the grated jaggery over the top, or stir it through for a more even sweetness.
- Serve at once at room temperature; this needs no stove at all and is ordinary Assamese breakfast, not only a Bihu specialty.
Serve it with
A Northeast Indian breakfast is a plate rather than a single dish. These are the courses that normally sit beside Chira Doi Gur (Flattened Rice with Curd and Jaggery), read from the same composition Dinejot builds a real meal from.

The sharp little thing
A course labelled with another kitchen's name comes from a cuisine in the same family, which is where this plate usually borrows it from.
Safe at your table
Dinejot tracks ten allergens and tags every one of them by hand, so the absences below are as deliberate as the presences. Chira Doi Gur (Flattened Rice with Curd and Jaggery) carries dairy. It is free of the remaining 9 allergens on that list.

When to cook it
Chira Doi Gur (Flattened Rice with Curd and Jaggery) takes about 10 minutes from a cold stove to the table, and the cooking itself is easy going. It is eaten at breakfast. Nothing in the calendar rules it out, so it is a year round dish.
