  • 3/4 cup round-grain pudding rice
  • 4 cups whole milk
  • 3 tbsp sugar
  • 1 tsp vanilla extract
  • 1 pinch salt
  • 1 tbsp butter
  • 2 tbsp cinnamon sugar, for topping

How to cook it

  1. Combine the rice, milk, sugar, and salt in a heavy-bottomed pot and bring to a gentle boil, stirring often.
  2. Reduce the heat to low, cover, and simmer for 25 to 30 minutes, stirring occasionally, until the rice is very soft and the mixture has thickened into a creamy pudding.
  3. Stir in the vanilla and the butter, then remove from the heat.
  4. Spoon into bowls and dust the cinnamon sugar over the top.
  5. Serve warm as a simple, light stand-alone dinner, the way German families still serve it to kids on an easy weeknight.
