Ingredients

  • 2 cups sprouted moth beans
  • 1 onion
  • 1 tomato
  • 1 tsp grated ginger
  • 3 garlic cloves
  • 1/2 tsp mustard seeds
  • 1/2 tsp cumin seeds
  • 1/2 tsp turmeric
  • 1 tsp red chili powder
  • 1 tsp goda masala
  • 2 tbsp roasted peanuts
  • 3 tbsp neutral oil
  • 1.5 cups water
  • 1 tsp salt
  • 2 tbsp chopped cilantro

How to cook it

  1. Heat the oil in a pot, add the mustard and cumin seeds, and let them crackle.
  2. Add the chopped onion, ginger, and garlic, and saute until golden.
  3. Add the chopped tomato, turmeric, chili powder, and goda masala, and cook until the tomato softens, about 5 minutes.
  4. Add the sprouted moth beans and crushed peanuts, and stir to coat in the masala.
  5. Pour in the water and salt, cover, and simmer until the sprouts are tender but still hold their shape, about 15 minutes.
  6. Garnish with cilantro and serve with bread, pav, or plain rice.
