Ingredients

  • 1 lb bitter gourd
  • 3 onions
  • 3 garlic cloves
  • 1 tsp cumin seeds
  • 1/2 tsp turmeric
  • 1.5 tsp ground coriander
  • 1/2 tsp red chili powder
  • 3/4 tsp amchur
  • 4 tbsp neutral oil
  • 1 tsp salt

How to cook it

  1. Scrape and thinly slice the bitter gourd, rub it with 1/2 tsp salt, and rest 20 minutes, then squeeze out the bitter juices and rinse.
  2. Heat 2 tbsp oil and saute the bitter gourd over medium heat until browned and crisp at the edges, about 10 minutes, then set aside.
  3. Add the remaining oil and let the cumin sizzle, then cook the sliced onions and garlic until deep golden and sweet, about 12 minutes.
  4. Stir in the turmeric, coriander, and chili powder and cook for 1 minute.
  5. Return the bitter gourd, season with the remaining salt and amchur, and toss over low heat for 5 minutes.
  6. Serve hot with roti and dal.
