  • 4 crusty bread rolls (Broetchen), split
  • 4 slices dark rye or mixed-grain bread (Vollkornbrot), sliced
  • 4 oz sliced Gouda or Edam cheese
  • 3 oz Emmental or Butterkaese, sliced
  • 2 tbsp butter, softened
  • 3 tbsp strawberry or cherry jam
  • 2 tbsp honey
  • 1/2 cucumber, thinly sliced
  • 1 tomato, sliced

How to cook it

  1. Split the bread rolls and set them out with the sliced dark bread on a board.
  2. Spread a thin layer of butter over the cut sides while the rolls are still fresh.
  3. Arrange the two cheeses on a plate, overlapping the slices so everyone can reach them.
  4. Set the jam and the honey out in small dishes, each with its own spoon.
  5. Add the sliced cucumber and tomato alongside, the way a modern German table now does.
  6. Serve straight away so everyone builds their own open-faced Brot: cheese on one, jam or honey on the next.
