Ingredients

  • 1.5 lb potatoes
  • 4 eggs
  • 4 oz jamon serrano
  • 1 cup olive oil
  • 1/2 tsp salt

How to cook it

  1. Peel the potatoes, cut them into thick fries, and pat them dry.
  2. Heat the olive oil in a deep skillet over medium heat and fry the potatoes for about 12 minutes, turning occasionally, until deep golden outside and tender inside.
  3. Lift the fries onto a paper towel lined plate, season with the salt, and pile them onto a warm serving plate.
  4. In the same pan with a little of the hot oil, fry the eggs sunny side up until the whites are set but the yolks stay runny, about 3 minutes.
  5. Lay the fried eggs on top of the potatoes, scatter the torn jamon serrano over the top, and break the yolks at the table so they run down over the potatoes and ham.
