Crema de Calabacin (Cream of Zucchini Soup)

Ingredients
- 2 lb zucchini
- 1 potato
- 1 onion
- 2 garlic cloves
- 3 cups vegetable broth
- 2 tbsp extra virgin olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
How to cook it
- Heat the olive oil in a pot and cook the chopped onion and garlic over medium heat until soft, about 5 minutes.
- Add the diced zucchini and the diced potato and cook for 2 minutes, stirring.
- Pour in the vegetable broth, bring to a boil, then lower the heat and simmer for 15 minutes until the vegetables are completely tender.
- Blend the soup until smooth with an immersion blender or in a countertop blender.
- Season with the salt and the pepper and serve hot with a light drizzle of olive oil on top; this is one of Spain's most common light dinners, especially in the colder months.
