Ingredients

  • 2 cups dried white beans (soaked overnight)
  • 8 oz chorizo
  • 4 oz morcilla
  • 1 onion
  • 3 garlic cloves
  • 1 bay leaf
  • 1 tsp sweet paprika
  • 2 tbsp olive oil
  • 6 cups water
  • 1 tsp salt

How to cook it

  1. Put the soaked, drained beans in a large pot with the whole onion, garlic, bay leaf, and enough water to cover by two inches.
  2. Bring to a gentle boil, skim off any foam, then lower the heat and simmer uncovered for about an hour, topping up with a splash of cold water now and then so the beans cook gently rather than breaking apart.
  3. Meanwhile heat the olive oil in a small pan and brown the sliced chorizo and morcilla, then stir in the paprika off the heat so it does not scorch.
  4. About 20 minutes before the beans are done, add the browned sausages and their flavorful oil to the pot.
  5. Simmer everything together until the beans are creamy and the broth has thickened slightly, season with the salt, and ladle into deep bowls.
