Chuletas de Cerdo a la Plancha (Pan-Seared Pork Chops)
Chuletas de Cerdo a la Plancha (Pan-Seared Pork Chops) is Spanish home cooking, eaten at lunch and dinner. On the plate it is the dish at the centre. Below is what usually sits beside it, what it does and does not contain, and what else to cook once you have made it.
Ingredients
- 4 pork loin chops
- 2 tbsp olive oil
- 2 garlic cloves
- 1 sprig fresh rosemary
- 1 tsp salt
- 1/2 tsp black pepper
How to cook it
- Season the pork chops on both sides with the salt and the black pepper and let them sit at room temperature for 10 minutes.
- Heat the olive oil in a heavy skillet or griddle over medium high heat and add the crushed garlic and the rosemary sprig to flavor the oil.
- Lay the chops in the hot pan and sear for 4 to 5 minutes on the first side without moving them, until well browned.
- Flip and cook for another 3 to 4 minutes on the second side until cooked through but still juicy, with no pink remaining near the bone.
- Remove from the heat, discard the garlic and the rosemary, and let the chops rest for 2 minutes before serving.
