Ingredients
- 2 cups short grain rice
- 4 tbsp olive oil
- 1 onion
- 3 garlic cloves
- 2 ripe tomato
- 1 green bell pepper
- 1 red bell pepper
- 1 cup green beans
- 4 artichoke hearts
- 1 tsp sweet paprika
- 1 pinch saffron threads
- 5 cups vegetable broth
- 1 tsp salt
How to cook it
- Heat the olive oil in a wide, shallow pan or large skillet and cook the chopped onion, garlic, and both peppers over medium heat until soft, about 8 minutes.
- Stir in the grated tomato and the paprika and cook for 3 minutes until the sofrito deepens in color.
- Add the green beans and artichoke hearts and cook for 5 minutes, then stir in the rice so every grain gets coated in the sofrito.
- Pour in the broth, crumble in the saffron, and season with the salt, then bring to a boil, lower the heat, and simmer uncovered for 18 to 20 minutes, stirring occasionally so the rice stays loose and soupy the way an everyday home meloso rice should be, rather than cooking it down dry.
- Let the pot rest, covered, for 5 minutes off the heat before serving so the last of the broth is absorbed into the rice.
