Ingredients

  • 5 tomatoes
  • 1 onion
  • 1 tbsp grated ginger
  • 2 green chilies
  • 1/2 tsp mustard seeds
  • 1 tsp cumin seeds
  • 1/2 tsp turmeric
  • 1/2 tsp red chili powder
  • 1 tsp coriander powder
  • 1 tsp sugar
  • 1.5 cups sev
  • 3 tbsp neutral oil
  • 1/2 cup water
  • 3/4 tsp salt
  • 2 tbsp chopped cilantro

How to cook it

  1. Heat the oil in a pan and let the mustard and cumin seeds crackle.
  2. Add the chopped onion and green chilies and saute until soft.
  3. Stir in the grated ginger, turmeric, chili powder, and coriander powder, and cook for a minute.
  4. Add the chopped tomatoes, sugar, and salt, and cook until the tomatoes break down into a soft, jammy gravy, about 10 minutes.
  5. Loosen with the water and simmer 5 minutes more.
  6. Just before serving, scatter the sev generously over the top so it stays a little crisp, finish with cilantro, and serve right away with roti.
