Ingredients
- 5 tomatoes
- 1 onion
- 1 tbsp grated ginger
- 2 green chilies
- 1/2 tsp mustard seeds
- 1 tsp cumin seeds
- 1/2 tsp turmeric
- 1/2 tsp red chili powder
- 1 tsp coriander powder
- 1 tsp sugar
- 1.5 cups sev
- 3 tbsp neutral oil
- 1/2 cup water
- 3/4 tsp salt
- 2 tbsp chopped cilantro
How to cook it
- Heat the oil in a pan and let the mustard and cumin seeds crackle.
- Add the chopped onion and green chilies and saute until soft.
- Stir in the grated ginger, turmeric, chili powder, and coriander powder, and cook for a minute.
- Add the chopped tomatoes, sugar, and salt, and cook until the tomatoes break down into a soft, jammy gravy, about 10 minutes.
- Loosen with the water and simmer 5 minutes more.
- Just before serving, scatter the sev generously over the top so it stays a little crisp, finish with cilantro, and serve right away with roti.
