Egg Bhurji

Ingredients
- 8 eggs
- 1 onion
- 2 tomatoes
- 2 green chilies
- 2 garlic cloves
- 1 tsp cumin seeds
- 1/2 tsp turmeric
- 1/2 tsp red chili powder
- 1/2 tsp garam masala
- 3 tbsp neutral oil
- 1/4 cup chopped cilantro
- 3/4 tsp salt
How to cook it
- Beat the eggs lightly with a pinch of the salt and set aside.
- Heat the oil in a pan and let the cumin sizzle, then cook the onion, garlic, and green chilies until soft, about 5 minutes.
- Stir in the turmeric and chili powder, then add the chopped tomatoes and cook until soft, about 4 minutes.
- Pour in the beaten eggs and stir constantly over medium heat until softly scrambled and just set, about 3 minutes.
- Sprinkle with garam masala and cilantro and serve hot with pav or roti.
