Ingredients

  • 1 cup rice, soaked
  • 1/2 cup chana dal, soaked
  • 1 potato, boiled and mashed
  • 1 tsp cumin seeds
  • 2 green chilies
  • 1 tsp grated ginger
  • 1/4 tsp turmeric
  • 1 tsp salt
  • 3 cups mustard oil, for deep frying

How to cook it

  1. Soak the rice and chana dal together for at least 4 hours, then drain.
  2. Grind the rice and dal with the green chilies, ginger, and a little water into a thick, slightly coarse batter, similar to a pakora batter.
  3. Mash in the boiled potato, then stir in the cumin seeds, turmeric, and salt, and let the batter rest for 15 minutes.
  4. Heat the mustard oil for deep frying in a kadai until hot.
  5. Ladle spoonfuls of the batter into the hot oil, flattening each gently into a thick disc, and fry until deep golden and crisp on both sides, about 4 minutes per batch.
  6. Drain on paper towels and serve hot with ghugni or aloo dum.
