Ingredients

  • 12 corn tortillas
  • 2 cups tomatillo salsa verde
  • 4 large eggs
  • 3/4 cup crumbled queso fresco
  • 1/2 white onion
  • 1/2 cup Mexican crema
  • 1/4 cup chopped cilantro
  • 3 tbsp neutral oil
  • 1/2 tsp salt

How to cook it

  1. Cut the corn tortillas into wedges and fry in the hot oil in batches until crisp and golden, then drain on paper towels.
  2. Warm the salsa verde in a wide skillet over medium heat until it simmers.
  3. Add the fried tortilla chips and toss just until lightly coated but still slightly crisp, about 1 minute.
  4. Meanwhile fry the eggs in a separate pan to your liking, about 3 minutes for runny yolks.
  5. Divide the chilaquiles among plates and top each with a fried egg.
  6. Scatter thin onion rings, queso fresco, and cilantro over the top and drizzle with crema.
