Ingredients

  • 3 cups cooked shredded chicken
  • 12 corn tortillas
  • 4 oz cream cheese
  • 1 cup shredded Monterey Jack
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1 cup neutral oil
  • 1/2 cup salsa
  • 1 cup guacamole
  • 1 tsp salt

How to cook it

  1. Mix the shredded chicken with the softened cream cheese, Monterey Jack, cumin, chili powder, garlic powder, and salt.
  2. Warm the corn tortillas until pliable so they roll without cracking.
  3. Spoon a line of the chicken filling along each tortilla and roll tightly, securing with a toothpick.
  4. Heat the oil in a skillet over medium-high until shimmering.
  5. Fry the taquitos in batches, turning, until golden and crisp, about 3 minutes, then drain on paper towels.
  6. Serve hot with salsa and guacamole for dipping.
