Capsicum Besan Sabzi

Ingredients

  • 4 bell peppers
  • 1/2 cup chickpea flour
  • 1 onion
  • 1 tsp cumin seeds
  • 1/2 tsp turmeric
  • 1 tsp ground coriander
  • 1/2 tsp red chili powder
  • 1/2 tsp amchur
  • 4 tbsp neutral oil
  • 3/4 tsp salt

How to cook it

  1. Deseed the bell peppers and cut them into thin strips, and thinly slice the onion.
  2. Dry roast the chickpea flour in a pan over low heat until it smells nutty and turns a shade darker, about 4 minutes, then set aside.
  3. Heat the oil in the same pan and let the cumin sizzle, then cook the onion until soft, about 4 minutes.
  4. Add the peppers, turmeric, coriander, and chili powder and stir-fry over medium-high until the peppers are crisp-tender, about 6 minutes.
  5. Sprinkle in the roasted chickpea flour and salt and toss until it coats the peppers in a dry, savory crumble, about 4 minutes.
  6. Finish with amchur and serve hot with roti.
