Capsicum Besan Sabzi

Ingredients
- 4 bell peppers
- 1/2 cup chickpea flour
- 1 onion
- 1 tsp cumin seeds
- 1/2 tsp turmeric
- 1 tsp ground coriander
- 1/2 tsp red chili powder
- 1/2 tsp amchur
- 4 tbsp neutral oil
- 3/4 tsp salt
How to cook it
- Deseed the bell peppers and cut them into thin strips, and thinly slice the onion.
- Dry roast the chickpea flour in a pan over low heat until it smells nutty and turns a shade darker, about 4 minutes, then set aside.
- Heat the oil in the same pan and let the cumin sizzle, then cook the onion until soft, about 4 minutes.
- Add the peppers, turmeric, coriander, and chili powder and stir-fry over medium-high until the peppers are crisp-tender, about 6 minutes.
- Sprinkle in the roasted chickpea flour and salt and toss until it coats the peppers in a dry, savory crumble, about 4 minutes.
- Finish with amchur and serve hot with roti.
