Veggie Omelette

Ingredients
- 8 large eggs
- 2 tbsp butter
- 1 bell pepper
- 1/2 cup onion
- 2 cups baby spinach
- 3/4 cup shredded cheddar
- 1/2 tsp salt
- 1/4 tsp black pepper
How to cook it
- Beat the eggs with the salt and pepper.
- Melt 1/2 tbsp butter in a nonstick skillet over medium heat and soften the onion and bell pepper, 4 minutes; add the spinach until wilted, then remove.
- Wipe the pan, melt another 1/2 tbsp butter, and pour in a quarter of the eggs, tilting to coat.
- When almost set, scatter a quarter of the vegetables and cheddar over half, then fold and slide onto a plate.
- Repeat to make four omelettes and serve hot.
