How to cook it

  1. Heat a waffle iron and whisk the flour, sugar, baking powder, and salt in a large bowl.
  2. Separate the eggs, then beat the whites to soft peaks in a clean bowl.
  3. Whisk the yolks, milk, melted butter, and vanilla, then fold into the dry ingredients until just combined.
  4. Gently fold in the beaten whites to keep the batter airy.
  5. Cook the batter in the waffle iron until crisp and golden, about 4 minutes per waffle.
  6. Serve hot with maple syrup.
