Ingredients
- 3 raw green bananas
- 2 tbsp coconut oil
- 1 tsp mustard seeds
- 1 tsp urad dal
- 2 dried red chilies
- 10 curry leaves
- 1/4 tsp turmeric
- 1/4 tsp red chili powder
- 1/2 cup fresh grated coconut
- 3/4 tsp salt
How to cook it
- Rub your hands and knife with a little oil, then peel the raw bananas and finely dice them, dropping the pieces into water to keep them from darkening.
- Heat the coconut oil in a pan, let the mustard seeds pop, then add the urad dal and cook until golden.
- Add the dried red chilies and curry leaves and let them sizzle.
- Drain the banana, add it to the pan with the turmeric, chili powder, and salt, toss well, cover, and cook on medium-low, stirring occasionally, until tender, about 15 minutes.
- Uncover, fold in the grated coconut, and cook 2 minutes more before serving.
