Ingredients

  • 1 lb green beans
  • 2 tbsp coconut oil
  • 1 tsp mustard seeds
  • 1 tsp urad dal
  • 2 dried red chilies
  • 12 curry leaves
  • 1 green chili
  • 1/4 tsp turmeric
  • 1/2 cup fresh grated coconut
  • 3/4 tsp salt

How to cook it

  1. Trim the green beans and finely chop them into small, even pieces.
  2. Heat the coconut oil in a wide pan and let the mustard seeds pop, then add the urad dal and let it turn golden.
  3. Add the dried red chilies, curry leaves, and slit green chili and let them sizzle for a few seconds.
  4. Add the chopped beans, turmeric, and salt, toss to coat, cover, and cook on medium-low until just tender, about 12 minutes.
  5. Uncover, cook off any extra moisture, fold in the grated coconut, and cook 2 minutes more before serving warm alongside rice and sambar.
