Ingredients

  • 1.5 lb spinach or amaranth greens
  • 2 tbsp coconut oil
  • 1 tsp mustard seeds
  • 1 tsp urad dal
  • 3 garlic cloves
  • 2 dried red chilies
  • 1/4 tsp turmeric
  • 1/3 cup fresh grated coconut
  • 1/2 tsp salt

How to cook it

  1. Wash the greens well and chop them roughly.
  2. Heat the coconut oil in a wide pan, let the mustard seeds pop, then add the urad dal and cook until golden.
  3. Add the crushed garlic and dried red chilies and let them sizzle for a few seconds.
  4. Add the chopped greens, turmeric, and salt in batches, tossing until wilted, and cook over medium heat until any water cooks off, about 8 minutes.
  5. Fold in the grated coconut and serve warm alongside rice and sambar.
