Cabbage Thoran

Ingredients

  • 1 small head cabbage
  • 3/4 cup fresh grated coconut
  • 4 shallots
  • 2 garlic cloves
  • 2 green chilies
  • 1/2 tsp cumin seeds
  • 2 tbsp coconut oil
  • 1 tsp mustard seeds
  • 2 dried red chilies
  • 12 curry leaves
  • 1/4 tsp turmeric
  • 3/4 tsp salt

How to cook it

  1. Core and finely shred the cabbage.
  2. Coarsely pound or pulse the grated coconut with the shallots, garlic, green chilies, and cumin seeds into a rough, chunky paste.
  3. Heat the coconut oil in a wide pan, let the mustard seeds pop, then add the dried red chilies and curry leaves.
  4. Add the shredded cabbage, turmeric, and salt, toss well, cover, and cook on medium-low, stirring occasionally, until the cabbage is just tender, about 10 minutes.
  5. Fold in the pounded coconut mixture, cook uncovered for 3 minutes to let the raw edge cook off, and serve warm.
