- 8 eggs
- 2 tbsp olive oil
- 1/2 tsp salt
How to cook it
- Crack two eggs per omelette into a bowl, season with a pinch of the salt, and beat well with a fork until no streaks of white remain.
- Heat a little of the olive oil in a small nonstick skillet over medium high heat until it shimmers.
- Pour in one portion of the beaten egg and let it set around the edges for about 20 seconds, then push the cooked egg toward the center with a spatula, tilting the pan so the runny egg flows underneath.
- Once the top is just barely set but still glossy, fold the omelette in half or roll it into thirds and slide it onto a plate.
- Wipe out the pan, add a touch more oil, and repeat with the remaining eggs to make the rest of the omelettes.
- Serve each omelette straightaway while it is still soft in the middle, exactly the light nothing in the fridge dinner it is meant to be.
