Ingredients
- 1 9-inch puff pastry sheet, thawed
- 4 leeks, white and light green parts, sliced
- 2 tbsp butter
- 1/2 cup creme fraiche
- 3/4 cup Gruyere cheese, grated
- 1 pinch ground nutmeg
- 1/2 tsp salt
- 1/4 tsp black pepper
How to cook it
- Preheat the oven to 400 F and press the puff pastry into a tart pan, pricking the base all over with a fork.
- Melt the butter in a covered saucepan and cook the sliced leeks over low heat, stirring occasionally, until very soft but not browned, about 15 minutes.
- Stir the creme fraiche, nutmeg, salt, and pepper into the leeks and remove from the heat.
- Spread the leek mixture over the pastry, leaving a small border, and scatter the Gruyere on top.
- Bake for 25 minutes, until the pastry is puffed and golden and the cheese is bubbling.
- Let the tart cool for 5 minutes before slicing; made with no egg custard, it is a genuinely vegetarian everyday tart.
