Suji Halwa (Semolina Pudding)

Ingredients

  • 1 cup semolina (sooji)
  • 1/2 cup ghee
  • 3/4 cup sugar
  • 2.5 cups water
  • 1/2 cup milk
  • 4 cardamom pods
  • 2 tbsp cashews
  • 2 tbsp raisins
  • 2 tbsp almonds

How to cook it

  1. Warm the water and milk together with the sugar until the sugar dissolves, then keep it hot.
  2. Melt the ghee in a heavy pan and fry the cashews, almonds, and raisins until golden, then scoop them out.
  3. Add the semolina to the ghee and roast on low heat, stirring constantly, until it turns golden and smells nutty, about 8 minutes.
  4. Carefully pour in the hot sweetened milk mixture while stirring so no lumps form, then add the crushed cardamom.
  5. Cook until the halwa thickens and pulls away from the pan, then fold in the fried nuts and serve warm.
