  • 15 oz canned black beans
  • 1 cup corn kernels
  • 1 avocado
  • 1 lime
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/4 cup chopped cilantro
  • 2 tbsp olive oil
  • 1/2 tsp salt

How to cook it

  1. Heat the oven to 425F, prick the sweet potatoes all over, and roast until tender, about 45 minutes.
  2. Warm the black beans and corn in a skillet with the olive oil, cumin, and chili powder, about 5 minutes, then season with salt.
  3. Mash the avocado with the lime juice and a pinch of salt.
  4. Split the roasted sweet potatoes lengthwise and fluff the insides with a fork.
  5. Fill each with the black bean and corn mixture.
  6. Top with the mashed avocado and a scatter of cilantro and serve.
