Ingredients

  • 1.5 cups green or brown lentils
  • 1 carrot
  • 1 bay leaf
  • 1 shallot, minced
  • 1 tbsp Dijon mustard
  • 2 tbsp red wine vinegar
  • 4 tbsp olive oil
  • 3 tbsp fresh parsley, chopped
  • 1 tsp salt
  • 1/4 tsp black pepper

How to cook it

  1. Put the lentils in a pot with the whole carrot and the bay leaf, cover with water by 2 inches, bring to a boil, then lower the heat and simmer uncovered for 20 to 25 minutes, until tender but still holding their shape.
  2. Meanwhile whisk together the Dijon mustard, red wine vinegar, salt, and pepper, then whisk in the olive oil to make the vinaigrette.
  3. Drain the lentils well, discard the bay leaf and carrot, and toss the warm lentils with the vinaigrette right away so they soak it up.
  4. Stir in the minced shallot and chopped parsley.
  5. Taste and adjust the seasoning, then serve warm or at room temperature.
  6. Unlike the classic saucisses-lentilles or garbure, this salad is built with no lardons or ham at all, the genuinely meatless form of a French lentil dish rather than the pork-by-default version.
