Sabudana Khichdi (Tapioca Pearls)

Ingredients
- 1.5 cups sabudana (tapioca pearls)
- 2 potato
- 3/4 cup roasted peanuts
- 2 green chilies
- 1 tsp cumin seeds
- 10 curry leaves
- 3 tbsp neutral oil
- 1 lemon
- 1/4 cup chopped cilantro
- 1 tsp sugar
- 3/4 tsp salt
How to cook it
- Rinse the sabudana, then soak it in just enough water to cover for 5 hours until the pearls are plump and soft.
- Coarsely crush the roasted peanuts and mix them into the drained sabudana with the salt and sugar.
- Heat the oil in a pan and let the cumin seeds sizzle, then add the curry leaves, green chilies, and diced potato and cook until the potato is tender.
- Add the sabudana mixture and cook gently, tossing, until the pearls turn translucent, about 5 minutes.
- Finish with a squeeze of lemon and the cilantro and serve warm.
