Potato Podimas

Ingredients

  • 1.5 lb potatoes
  • 2 tbsp coconut oil
  • 1 tsp mustard seeds
  • 1 tsp urad dal
  • 1 tsp chana dal
  • 2 dried red chilies
  • 10 curry leaves
  • 2 green chilies
  • 1/4 tsp turmeric
  • 1/3 cup fresh grated coconut
  • 2 tbsp chopped cilantro
  • 3/4 tsp salt

How to cook it

  1. Boil the potatoes until fork-tender, cool, peel, and crumble them coarsely with your hands.
  2. Heat the coconut oil in a pan, let the mustard seeds pop, then add the urad dal and chana dal and cook until golden.
  3. Add the dried red chilies, curry leaves, and slit green chilies and let them sizzle.
  4. Add the turmeric and crumbled potatoes, season with salt, and toss gently over medium heat until well coated and lightly golden, about 8 minutes.
  5. Fold in the grated coconut and cilantro and serve warm alongside rice and sambar.
