Poha (Flattened Rice Breakfast)

Ingredients
- 3 cups thick poha (flattened rice)
- 1 potato
- 1 onion
- 1/2 cup green peas
- 1/3 cup roasted peanuts
- 2 green chilies
- 10 curry leaves
- 1 tsp mustard seeds
- 1/2 tsp turmeric
- 1 lemon
- 3 tbsp neutral oil
- 1/4 cup chopped cilantro
- 1 tsp sugar
- 1 tsp salt
How to cook it
- Rinse the poha in a colander until it just softens, then let it drain while you prep the vegetables.
- Heat the oil in a wide pan over medium and let the mustard seeds pop, then add the peanuts, curry leaves, and green chilies.
- Stir in the diced potato and cook until nearly tender, about 8 minutes, then add the onion and peas and soften for 4 minutes.
- Sprinkle in the turmeric, sugar, and salt, then fold in the drained poha gently until warmed through, about 3 minutes.
- Finish with a squeeze of lemon and the fresh cilantro and serve warm.
