Paneer Bhurji

Paneer Bhurji is North Indian home cooking, eaten at lunch and dinner. On the plate it is the dish at the centre. Below is what usually sits beside it, what it does and does not contain, and what else to cook once you have made it.

Ingredients

  • 14 oz paneer
  • 1 onion
  • 2 tomatoes
  • 2 green chilies
  • 3 garlic cloves
  • 1 tbsp grated ginger
  • 1 tsp cumin seeds
  • 1/2 tsp turmeric
  • 1/2 tsp red chili powder
  • 1/2 tsp garam masala
  • 3 tbsp neutral oil
  • 1/4 cup chopped cilantro
  • 3/4 tsp salt

How to cook it

  1. Crumble the paneer coarsely with your hands and set it aside.
  2. Heat the oil in a pan and let the cumin seeds sizzle, then cook the onion, garlic, ginger, and green chilies until soft, about 5 minutes.
  3. Stir in the turmeric and chili powder, then add the chopped tomatoes and cook until soft and jammy, about 5 minutes.
  4. Fold in the crumbled paneer and salt and toss over medium heat until warmed through and evenly coated, about 4 minutes.
  5. Sprinkle with garam masala and cilantro and serve hot with roti or pav.

When to cook it

Paneer Bhurji takes about 25 minutes from a cold stove to the table, and the cooking itself is easy going. It is eaten at lunch and dinner. Nothing in the calendar rules it out, so it is a year round dish.
