Ingredients
- 1/2 cup jowar flour
- 1/4 cup bajra flour
- 1/4 cup rice flour
- 1/4 cup besan
- 1 chopped onion
- 2 tbsp chopped cilantro
- 1 tsp grated ginger
- 2 green chilies
- 1/2 tsp turmeric
- 1/2 tsp red chili powder
- 1 tsp cumin seeds
- 4 tbsp oil
- 3/4 tsp salt
- 1/4 cup water
How to cook it
- Mix the jowar flour, bajra flour, rice flour, and besan in a large bowl with the chopped onion, cilantro, ginger, green chilies, turmeric, chili powder, cumin seeds, and salt.
- Add a tablespoon of oil and enough warm water to bring the mixture into a soft, pliable dough.
- Divide the dough into 4 portions and pat each one out directly on a greased tawa or a wet piece of parchment into a thin round, poking a few holes in the center with your finger for even cooking.
- Drizzle oil around the edges and over the holes, cover, and cook on medium heat until the bottom is golden, about 5 minutes.
- Flip carefully and cook the other side uncovered until crisp and browned in spots.
- Serve hot with a squeeze of lime and your favorite pickle on the side.
