Ingredients

  • 3 eggs
  • 1 cup sugar
  • 1 cup sunflower oil
  • 1/4 cup whole milk
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1 tsp lemon zest
  • 1 pinch salt

How to cook it

  1. Preheat the oven to 375F (190C) and line a muffin tin with paper cases.
  2. In a large bowl whisk the eggs and sugar together until pale and slightly thickened, about 2 minutes.
  3. Whisk in the sunflower oil, the milk, and the lemon zest until smooth.
  4. Sift in the flour, the baking powder, and the salt, and fold gently just until no dry streaks remain; do not overmix.
  5. Divide the batter among the muffin cases, sprinkle a little extra sugar on top, and bake for 18 to 20 minutes until golden and a toothpick comes out clean.
  6. Let the magdalenas cool in the tin for 5 minutes before turning out; they keep well for a couple of days, ready for tomorrow's breakfast too.
