Ingredients
- 1 lb cluster beans
- 2 tbsp coconut oil
- 1 tsp mustard seeds
- 1 tsp urad dal
- 2 dried red chilies
- 10 curry leaves
- 1/4 tsp turmeric
- 1 tsp tamarind pulp
- 1/2 cup fresh grated coconut
- 3/4 tsp salt
How to cook it
- Trim the cluster beans and chop them into small pieces.
- Heat the coconut oil in a pan, let the mustard seeds pop, then add the urad dal and cook until golden.
- Add the dried red chilies and curry leaves and let them sizzle for a few seconds.
- Add the cluster beans, turmeric, tamarind pulp, and salt, toss well, add a small splash of water, cover, and cook on medium-low until tender, about 18 minutes.
- Uncover, cook off any extra moisture, fold in the grated coconut, and cook 2 minutes more before serving.
