Ingredients

  • 2 lb potatoes, peeled and diced
  • 2 leeks, sliced
  • 2 carrots, diced
  • 1 cup celery root, diced
  • 2 tbsp butter
  • 6 cups vegetable broth
  • 1/2 cup heavy cream
  • 1 pinch ground nutmeg
  • 2 tbsp fresh chives, chopped
  • 1 tsp salt
  • 1/4 tsp black pepper

How to cook it

  1. Melt the butter in a large pot and cook the leeks, carrots, and celery root over medium heat for 8 minutes, until softened.
  2. Add the potatoes and vegetable broth, bring to a boil, then lower the heat and simmer uncovered for 25 minutes, until the potatoes are fork-tender.
  3. Puree about half the soup directly in the pot with an immersion blender, leaving the rest chunky.
  4. Stir in the cream and nutmeg and warm through for 2 minutes.
  5. Season with the salt and pepper, ladle into bowls, and scatter the chives over the top; this meatless version is one of Germany's most common everyday vegetarian dinners.
