Ingredients
- 2 cups rice flour, roasted for idiyappam
- 2.25 cups water
- 3/4 tsp salt
- 1 tbsp neutral oil
How to cook it
- Bring the water to a boil with the salt and a teaspoon of oil, then pour it over the rice flour and mix quickly with a spoon until it comes together into a soft dough.
- While still warm, knead the dough briefly with lightly oiled hands until smooth and pliable.
- Fill an idiyappam press with the dough and squeeze it directly onto greased idli plates or steamer trays in circular, layered nests.
- Steam the trays over boiling water for 8 minutes, until the strands look glossy and set.
- Lift out the nests carefully and serve warm.
