Ingredients

  • 1 cup fine semolina (rava)
  • 1/2 cup rice flour
  • 1/4 cup all-purpose flour
  • 1 cup buttermilk
  • 2 cups water
  • 1 tsp cumin seeds
  • 2 green chilies, finely chopped
  • 1 tsp grated ginger
  • 1 onion, finely chopped
  • 10 curry leaves, chopped
  • 4 tbsp neutral oil
  • 1 tsp salt

How to cook it

  1. Whisk the semolina, rice flour, all-purpose flour, buttermilk, and salt together into a thin, watery batter and rest it for 20 minutes so the semolina softens.
  2. Stir in the cumin, green chilies, ginger, onion, curry leaves, and enough water to bring the batter to a pourable, almost runny consistency.
  3. Heat a flat griddle over medium-high and, working from the outside in, drizzle the batter through your fingers or a small ladle to form a lacy, web-like circle; do not spread it like a regular dosa.
  4. Drizzle oil around the edges and over any holes and cook until golden and crisp throughout, about 3 minutes.
  5. Carefully flip for a few seconds if you like extra crispness, then fold and serve hot.
