Home-Style Palak Paneer

Ingredients
- 14 oz paneer
- 1.5 lb spinach
- 1 onion
- 1 tomato
- 5 garlic cloves
- 1 tbsp grated ginger
- 2 green chilies
- 1 tsp cumin seeds
- 1 tsp ground coriander
- 1/2 tsp turmeric
- 1 tsp garam masala
- 3 tbsp neutral oil
- 1 tsp salt
How to cook it
- Blanch the spinach in boiling water for 1 minute, drain, shock in cold water, then chop it fine for a rustic, home-style texture rather than a smooth puree.
- Heat the oil in a pan and let the cumin sizzle, then cook the onion, garlic, ginger, and green chilies until soft and golden, about 8 minutes.
- Stir in the turmeric, coriander, and chopped tomato and cook until the tomato breaks down, about 5 minutes.
- Add the chopped spinach and salt and simmer, stirring, for 6 minutes.
- Fold in the cubed paneer and garam masala and warm through for 4 minutes.
- Serve hot with roti or rice.
