Ingredients
- 1.5 lb apples, peeled, cored and chopped
- 2 tbsp sugar
- 1 tbsp lemon juice
- 2 lb potatoes, peeled and cut into chunks
- 3 tbsp butter
- 1/2 cup milk, warmed
- 1 onion, thinly sliced
- 1 tbsp vegetable oil
- 1 lb blood sausage (Blutwurst), sliced
- 1 tsp salt
- 1/4 tsp black pepper
How to cook it
- Simmer the chopped apples with the sugar, lemon juice, and 2 tbsp water in a covered saucepan over low heat for 15 minutes, until soft, then mash into a chunky applesauce.
- Meanwhile, boil the potatoes in salted water for 15 to 18 minutes, until fork-tender, then drain and mash with the butter and warm milk; season with the salt and pepper.
- Heat the oil in a skillet over medium heat and fry the onion until golden, about 6 minutes, then remove and set aside.
- In the same skillet, fry the blood sausage slices for 2 to 3 minutes per side, until warmed through and lightly crisped.
- Spoon the mashed potato onto plates, top with a generous spoonful of the applesauce, and finish with the fried blood sausage slices and crispy onions.
