Cocido Montanes (Cantabrian Bean and Cabbage Stew)

Ingredients
- 2 cups dried white beans (soaked overnight)
- 4 cups chopped cabbage
- 6 oz chorizo
- 4 oz morcilla
- 3 oz tocino
- 2 potatoes
- 1 onion
- 2 garlic cloves
- 1 tsp sweet paprika
- 1 tsp salt
How to cook it
- Put the soaked beans in a large pot with the whole onion, garlic, and the tocino, cover with water by two inches, and bring to a boil, skimming the foam.
- Lower the heat and simmer gently for about an hour, until the beans begin to soften.
- Add the potatoes and the chorizo and continue cooking for 20 minutes.
- Stir in the chopped cabbage and the morcilla and simmer until the cabbage is tender, about 20 minutes more, adding a splash of water if the pot looks dry.
- Stir in the paprika, season with the salt, and serve the beans, greens, and meats together in deep bowls.
