Ingredients

  • 1.5 lb fresh tuna or bonito steaks
  • 4 potatoes
  • 1 onion
  • 1 green bell pepper
  • 3 garlic cloves
  • 2 tomato
  • 1 tsp sweet paprika
  • 1 bay leaf
  • 3 tbsp olive oil
  • 4 cups fish stock or water
  • 1 tsp salt

How to cook it

  1. Heat the olive oil in a large pot and cook the chopped onion, green pepper, and garlic over medium heat until soft, about 8 minutes.
  2. Stir in the chopped tomato and the paprika and cook for 3 minutes until fragrant.
  3. Add the potatoes, breaking each piece off with the tip of a knife rather than slicing cleanly through, since the ragged edges release starch that thickens the broth.
  4. Pour in the fish stock and the bay leaf, bring to a boil, then lower the heat and simmer for 20 minutes until the potatoes are tender.
  5. Season with the salt, nestle the cubed tuna into the pot, and cook gently for 5 minutes more, just until the fish turns opaque; it overcooks quickly, so pull the pot from the heat as soon as it is done.
  6. Fish out the bay leaf and ladle the stew into deep bowls while hot.
