White Chicken Chili

Ingredients

  • 1.5 lb boneless skinless chicken thighs
  • 3 15 oz cans canned white beans
  • 1 onion
  • 4 garlic cloves
  • 2 4 oz cans diced green chiles
  • 1 tbsp ground cumin
  • 1 tsp dried oregano
  • 4 cups chicken broth
  • 4 oz cream cheese
  • 1/2 cup sour cream
  • 1 cup frozen corn
  • 1 lime
  • 1/4 cup chopped cilantro
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper

How to cook it

  1. Heat the olive oil in a large pot over medium and cook the onion until soft, about 5 minutes, then stir in the garlic, cumin, and oregano until fragrant.
  2. Add the chicken thighs, green chiles, and broth, bring to a simmer, and cook until the chicken is tender, about 18 minutes.
  3. Lift out the chicken, shred it with two forks, and return it to the pot.
  4. Mash one can of the drained white beans, then stir all the beans and the corn into the pot and simmer 5 minutes.
  5. Stir in the cream cheese and sour cream until melted and creamy, then season with the salt and pepper.
  6. Finish with a squeeze of lime and the cilantro and ladle into bowls.
