Vegetarian Chili

Ingredients

  • 15 oz canned black beans
  • 15 oz canned kidney beans
  • 15 oz canned pinto beans
  • 28 oz crushed tomatoes
  • 1 onion
  • 1 bell pepper
  • 1 cup corn kernels
  • 4 garlic cloves
  • 3 tbsp chili powder
  • 1 tbsp ground cumin
  • 1 tsp smoked paprika
  • 2 cups vegetable broth
  • 3 tbsp olive oil
  • 1 tsp salt

How to cook it

  1. Heat the olive oil in a pot and cook the onion, bell pepper, and garlic until soft, about 6 minutes.
  2. Stir in the chili powder, cumin, and paprika and cook 1 minute.
  3. Add the crushed tomatoes, all the beans, corn, and broth.
  4. Simmer, partly covered, until thick and flavorful, about 40 minutes, then season with salt.
  5. Serve hot, adjusting the seasoning to taste.
