Tartiflette (Potato, Bacon and Reblochon Gratin)

Ingredients

  • 2.5 lb potatoes, peeled and thinly sliced
  • 8 oz lardons (diced smoked bacon)
  • 1 onion, sliced
  • 3 tbsp dry white wine
  • 1/2 cup creme fraiche
  • 14 oz wheel reblochon cheese, halved horizontally
  • 1 tbsp butter
  • 1/2 tsp salt
  • 1/4 tsp black pepper

How to cook it

  1. Preheat the oven to 400 F and boil the sliced potatoes in salted water for 8 minutes, until just tender, then drain.
  2. Cook the lardons in a large skillet until golden, about 6 minutes, add the onion, and cook until soft, about 5 minutes, then pour in the wine and let it bubble away.
  3. Butter a baking dish and layer half the potatoes, half the lardon-onion mixture, and half the creme fraiche, then repeat the layers.
  4. Season with the salt and pepper and place the reblochon halves cut side down on top.
  5. Bake for 25 minutes, until the cheese is melted and bubbling and the top is golden, and let it rest for 5 minutes before serving.
