Potee (Pork and Vegetable One-Pot)

Ingredients
- 1.5 lb pork shoulder, cut into large chunks
- 1 lb smoked pork sausage, sliced
- 1 small head green cabbage, cut into wedges
- 1.5 lb potatoes, peeled and halved
- 3 carrots, cut into chunks
- 1 turnip, cut into chunks
- 1 onion, studded with 2 cloves
- 1 bay leaf
- 2 sprigs fresh thyme
- 8 cups water or chicken broth
- 1.5 tsp salt
- 1/2 tsp black pepper
How to cook it
- Put the pork shoulder, onion, bay leaf, and thyme in a large pot, cover with the water or broth, bring to a boil, skim off any foam, then lower to a gentle simmer, cover, and cook for 1 hour.
- Add the carrots and turnip and simmer for 20 minutes more.
- Add the potatoes, cabbage wedges, and sliced sausage, and simmer uncovered for 25 to 30 minutes, until the meat and all the vegetables are fork-tender.
- Season with the salt and pepper and remove the bay leaf and onion.
- Ladle the meat, sausage, and vegetables into deep bowls with some of the broth; this rustic one-pot needs nothing else at the table.
