Ingredients

  • 1 lb dried green split peas
  • 2 tbsp olive oil
  • 1 onion
  • 3 carrots
  • 3 celery stalks
  • 4 garlic cloves
  • 1 Yukon gold potato
  • 8 cups vegetable broth
  • 1 tsp smoked paprika
  • 2 bay leaves
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper

How to cook it

  1. Rinse and pick over the split peas.
  2. Heat the olive oil in a large pot over medium and cook the onion, carrots, celery, and garlic until soft, about 7 minutes.
  3. Stir in the smoked paprika and thyme, then add the split peas, diced potato, broth, and bay leaves.
  4. Bring to a boil, then reduce to a low simmer and cook, stirring now and then, until the peas break down into a thick soup, about 55 minutes.
  5. Discard the bay leaves and season with the salt and pepper, mashing some of the peas for a creamier texture.
  6. Thin with a little water if needed and serve hot.
