Chicken Noodle Soup

- 1 lb boneless skinless chicken thighs
- 8 oz egg noodles
- 3 carrots
- 3 celery stalks
- 1 onion
- 3 garlic cloves
- 8 cups chicken broth
- 1 bay leaf
- 2 tbsp olive oil
- 1/4 cup chopped parsley
- 1/2 tsp salt
- 1/4 tsp black pepper
How to cook it
- Heat the olive oil in a pot and soften the onion, carrots, celery, and garlic, about 6 minutes.
- Add the broth, bay leaf, and chicken thighs, bring to a boil, then simmer until the chicken is cooked, about 15 minutes.
- Remove the chicken, shred it, and return it to the pot.
- Stir in the egg noodles and cook until tender, about 8 minutes.
- Season with salt and pepper, stir in the parsley, and serve.
