Ingredients

  • 2 pork tenderloins
  • 2 apples
  • 1 red onion
  • 1.5 lb baby potatoes
  • 4 garlic cloves
  • 1 tbsp chopped rosemary
  • 2 tbsp Dijon mustard
  • 3 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper

How to cook it

  1. Heat the oven to 425F.
  2. Rub the pork tenderloins with the Dijon, half the garlic, rosemary, 1 tbsp olive oil, salt, and pepper.
  3. Toss the halved potatoes, apple wedges, red onion, and remaining garlic with the rest of the oil and season.
  4. Spread the vegetables on a sheet pan and roast 10 minutes.
  5. Nestle the pork among the vegetables and roast until the pork registers 145F, about 22 minutes.
  6. Rest the pork 5 minutes, then slice and serve with the roasted apples and potatoes.
