Ingredients
- 3 cups buttermilk, thin and well-soured
- 3 tbsp toor dal
- 1/4 cup grated coconut
- 1 tsp cumin seeds
- 2 green chilies
- 1.5 cups vegetable (white pumpkin or cucumber)
- 1/2 tsp turmeric
- 1 tsp mustard seeds
- 10 curry leaves
- 2 tbsp neutral oil
- 1 tsp salt
How to cook it
- Soak the toor dal for 30 minutes, then grind it with the coconut, cumin seeds, and green chilies into a smooth paste.
- Simmer the diced vegetable in a little water with the turmeric until just tender.
- Whisk the ground paste into the buttermilk, then stir this into the cooked vegetable with the salt.
- Warm gently over low heat, stirring, and remove from heat as soon as it is heated through so the buttermilk does not split.
- Heat the oil in a small pan, pop the mustard seeds with the curry leaves, and pour the tempering over the curry before serving.
